not too chunky::chunky salsa

My Mom loves to make this salsa and I have always loved to eat it! I finally made my own and it was so easy. And it's perfect for the coming summer months.



Ingredients:

3 large tomatoes, diced

1 large can diced tomatoes

1 garlic clove, diced (can substitute Garlic Powder to taste)

2 Tbsp onion, diced (can substitute Onion Powder to taste)

1 can El Pato

1 small can diced green chiles, with juice

1 small can diced jalapenos, drained (do not do a full can if you don't want it too spicy)

2 tsp fresh cilantro, finely chopped

salt to taste (1 tsp is a good start)
3 avacados, diced
1 can kernel corn, drained
1 can black beans, rinsed and drained

In a large bowl combine all ingredients except for the last three. When adding seasonings be sure to start small and add as you prefer.

With hand held food processor, blend out most of the chunks. (If you don't have a hand held, just scoop into food processor or blender in intervals.)

When you have reached your desired consistency, add the final three ingredients. Do a final taste test to make sure it is flavored as you would like.

(This is also good with a can of crushed pineapple)

Put into jars and refrigerate.
(I think the flavor is better after it has had some time to chill.)
